Since its beginnings, Magnolia has borne the torch of real ale, also known as cask-conditioned beer, matured in traditional cooperage in a temperature-controlled cellar and pulled into the customer’s glass by means of a hand pump mounted on the bar. In its earlier days these were generally English-style beer — milds, bitters and other pale ales, offset with dark offerings such as porter and stout. We still do that, but these days the selection is likely to be rounded out with less traditional beers — West Coast, hazy and Eclectic IPAs, for instance, beers with fruit and herbs and fruity new hop varieties — modern beers reflecting craft brewing’s ongoing revolution. It’s typical to find a couple of cask-conditioned beers available at both Magnolia locations, on Haight Street and in the Dogpatch.

Brewers Seth Wile, Anthony Lopez and Jon Taylor have laid by some very special casks to showcase Magnolia’s commitment both to traditional cask ale and all the new stuff Magnolia has rolled out since Dick Cantwell took over as Head of Brewing Operations, who wrote a foundational article on producing cask beers with two co-workers at Pike Place Brewery in Seattle for Brewing Techniques magazine back in 1992.
